Advisory Board Member: Chef Bruce Thompson
Charles Bruce-Thompson is the Consumer and Trade Specialist for Ontario Pork. He has produced numerous articles in trade and consumer publications, and developed recipes for many sectors. He is on the Advisory panel for Niagara Culinary Institute and PAC.
He began his career in the food sector as a dishwasher, liked the industry and took his apprenticeship in France. He moved on to a commis cook while in France and continued his climb to sous chef, then head chef in the UK. He has been head chef and executive chef. He has a Food and Nutrition degree.
Now that he is no longer a full-time chef, natural balance has been restored. With weekends and evenings freed up, family support and forbearance is not quite as crucial as it was. Family responsibilities are a lot more evenly shared today.
What little stress he experienced as a chef has been easily reduced by frequent cycling and recreational cooking
He enjoys reading, bird watching, yoga, and film noir He is a member of Slow Food. CCFCC on occasions, ORHMA, and Cuisine Canada
When asked for his strengths he stated, age, experience, and fatalism, and with his wit and his ability to see the humour in most situations, he looks forward to adding those values to the Advisory Board.
