Advisory Board Member: Chef Christopher Day
Chef Chris Day is an author and Mercer's Corporate Chef. A 1988 graduate of The Culinary Institute of America, Chef Chris' early years were spent as a pastry chef for well known New York and Chicago restaurants.
Chef Day is considered one of the country's foremost authorities on knives. His book, Knife Skills for Chefs (Prentice Hall) is endorsed by the American Culinary Federation.
This comprehensive book contains step-by-step instructions on selection, maintenance, safety and storage along with chapters on history, production and simple garnishing techniques. The book comes complete with two posters and a companion video, the text is an ideal reference reinforcing the artistry and skills that provide the foundation for a successful culinary career
Chef Day divides his time between the lecture circuit and as a consultant for Mercer Cutlery, sharing his years of experience with audiences across the country. In this capacity, he has been able to oversee and develop culinary tool kits students will need. In addition, he has lent his expertise in developing Mercer's Millennia™ and Genesis™ cutlery lines.
Chef Chris travels nationwide teaching others how to select and use the right knife for the job at hand as well as how to maintain them.
He looks forward to being part of the Advisory Board and sees his role as one that will help “sharpen the skills and hone in on the needs of the students and grads”.
